Gluten Free Flour Mixture

Here  is a basic gluten free flour mixture that I’ve used since I found that I have a gluten allergy.  Recently I have found that I am also sensitive to tapioca starch so I’ve substituted that for amaranth flour.

2 cups of brown rice flour

2 cups of white rice flour

1 cup tapioca starch or 1 cup amaranth flour

1 cup potato starch

1/4 cup potato flour

1/4 cup xanthun gum

1/2 pkg fruit pectin *This helps baked goods stay together but does have a faint taste of tartness to the baked good item.
