Gluten Free Chocolate Almond Cake

photo (50) Here is a delicious gf cake recipe that will satisfy your craving for chocolate with a hint of almond.  Preheat your oven to 350

4 squares of bakers unsweetened chocolate

6 Tablespoons butter

1 cup of sugar

2 eggs

1 1/2  teaspoon almond extract

1/3 cup almond flour

1 teaspoon gf baking powder

Using a double broiler, melt the chocolate of low heat and simmering water. Do this by placing a heatproof glass bowl over a small saucepan of simmering water. Once melted take off heat immediately and set aside.

In a bowl, using a hand mixer,  cream the butter and sugar together until light and fluffy.

Add the eggs and almond extract into the bowl and  beat for 1 minute until mixed well.

Slowly and gently fold in the melted chocolate to the butter mixture until well blended.

Add the dry ingredients into the wet ingredients and blend together well.

Prepare a round pie pan by lightly spraying it with non stick spray and line with parchment paper (cut to fit)

Pour the batter into the prepared pan and bake for 28 – 30 minutes or until when a skewer is inserted it wipes clean.

DON’T PANIC if the center caves in a bit as it cools.  Let the cake cool completely on a cookie rack.

Hold a plate over the top and tip the pan over to dump the cake out.  Slowly peel the parchment paper away. Refrigerate the cake for at least 30 minutes before serving

* Dust with sifted powdered sugar (optional)
