GF/DF Banana Muffins

GF DF Banana muffins

This is a recipe of my own making….with the help of my Great Grandma, that is.  She has the BEST banana bread recipe that I have converted over to a muffin recipe.  I’ve added a few things to make it dairy and gluten free and I removed a bit of the fat and sugar to make it more healthy.  I made these muffins this morning and not one kid complained, which that in itself is what I call success!

1 Cup of very ripe bananas (approximately 4)

2/3 cup sugar

1 egg

1/2 cup almond milk

1/4 cup oil (canola or coconut)

1 teaspoon vanilla

Mix well with a whisk.  Then add:

2 cups of your favorite GF/DF flour mix

2 Tablespoons ground flax seed meal

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

Stir Well and bake at 350 for 18-20 minutes

*Optional to add 1/2 cup chopped walnuts or pecans
