Chocolate Oatmeal Cookies

I am one of several people on my Dad’s side who are gluten intolerant.  I got this recipe from some cousins, last year at a family reunion.  It was written on a paper plate. (We were camping!) I have altered it a bit to suit my dairy intolerance as well as gluten intolerance.gfdf cookies Mix 1 cup of sugar and 1 cup of natural almond butter along with 2 eggs in a mixing bowl.  Add 2 tsp of coconut oil and blend well.  Add 1 tsp vanilla, 1 cup non-dairy chocolate chips and 1 cup of quick oats or instant potato flakes. Blend together.  Bake at 350 for 10-12 minutes and let set for 2 minutes before removing from cookie sheet.  Make sure to spray your pan with non-stick spray.  These cookies are light and chewy if you remove them just BEFORE they look like they are done. If you bake too long they will crisp up. But if you are like my Grandma, you can just dunk them in your coffee.
