Chocolate Cake and Fluffy Frosting

Are you sick of me posting chocolate desserts?!  I’m not sick of eating them so I just keep re-inventing 🙂  This one is dairy free as well as gluten free of course but it has a little something in it you probably haven’t heard of.  I don’t even know if it’s still available for purchase.  I found it in my food storage and I thought, “This is about to expire!  Let’s see if I can kill off all my family and save some calories at the same time…”  Just kidding about killing off my family.  But saving calories, it does.  The product is called Lighter Bake and it’s made by Sunsweet.  I’m positive with some more chemistry in my kitchen I could come up with a recipe for you since it only has 4 ingredients:  dried plums, dried apples, water and pectin.  So I will get right on that and see what I come up with.  In the meantime, here is the recipe for this cake:

8 Tablespoons of solidified coconut oil

4 Tablespoons of Lighter Bake

1 cup of sugar

3 eggs

1 teaspoon vanilla

1/4 cup almond milk

1/2 teaspoon white vinegar

1/2 cup cocoa powder

3/4 cup gluten free flour blend with xanthan gum

1 teaspoon of baking powder

Beat the coconut oil, lighter bake and sugar in a bowl.  Add the eggs and vanilla and mix well.  Combine the almond milk with the vinegar and set for 1 minute then add to the bowl and mix.  Finally add the cocoa powder, gluten free flour and baking soda.  Mix on high for 1-2 minutes scraping the sides and re-beating.

Spray an 8 inch pan with non-stick spray and bake at 350 for approximately 25 minutes.

Fluffy Frosting Recipe:  So easy your husband can make it, MINE DID!

3/4 cup sugar

1/4 cup boiling water

1/2 teaspoon cream of tarter

1 egg white

1 teaspoon vanilla

Put sugar, egg white, vanilla and cream of tarter into a mixing bowl.  Begin to mix with electric mixer on low.  Add boiling water while mixing.  Increase speed to highest setting and beat until frosting is the consistency of stiff whipped cream. This recipe is worth doubling 🙂
